Job Title: Head Cook / Kitchen Lead – Multi-Brand Cloud Kitchen

Type: Part-Time for initial 3 months later based on performance Full-time
About the role
We are looking for a Head Cook / Kitchen Lead to manage the entire back-of-house across three concepts:
• Coffee & snacks (Kaffe & Karvings)
• Gourmet sandwiches
• Healthy & comfort bowls
This role starts with menu research and testing in a cloud kitchen and then continues as the kitchen leader when we open the café.
Key Responsibilities
Menu Development (All Concepts)
• Work with the owner and General Manager to develop and finalize menus for:
◦ Coffee & snack items
◦ Hot & cold sandwiches
◦ Grain/salad/comfort bowls
• For each item:
◦ Test multiple versions
◦ Collect feedback
◦ Adjust for taste, speed, and cost
• Create standard recipes and documentation:
◦ Ingredient lists and prep steps
◦ Portion sizes (weights, scoops, etc.)
◦ Cooking times and methods
◦ Photos or notes for plating/packaging
Kitchen Setup & Daily Operations
• Set up efficient stations for:
◦ Coffee & snacks
◦ Sandwich line
◦ Bowls section
• Lead all prep and cooking:
◦ Batch cooking of grains, proteins, sauces, toppings
◦ Daily prep list and production plan
• Train and guide cooks / assistants to:
◦ Maintain consistent taste and portioning
◦ Keep a clean, safe, and organized kitchen
• Ensure orders are prepared accurately and on time, considering delivery SLAs.
Quality, Safety & Hygiene
• Maintain high standards of food quality and presentation across all brands.
• Implement proper food storage, labeling, rotation (FIFO).
• Ensure compliance with local health codes and food safety rules.
• Support in health inspection readiness as the physical store opens.
Inventory & Cost Awareness
• Work with General Manager to:
◦ Create prep and ordering par levels.
◦ Reduce wastage through better prep planning.
• Provide input on recipe costing and help adjust ingredients/portions to meet target margins without compromising quality.

• Help interview and train new kitchen staff as the business grows.
Requirements
• 4–6+ years experience as a Cook / Lead Line Cook / Sous Chef / Head Cook.
• Comfortable cooking:
◦ Café-style snacks and light bites
◦ Sandwiches (grilled, cold, toasted)
◦ Bowls (grains, salads, roasted vegetables, proteins, sauces)
• Experience in recipe creation and standardization.
• Strong understanding of prep, batch cooking, and delivery-friendly food.
• Able to work evenings and weekends as needed.
